In Iowa, a bag of twelve ears of fresh corn ready for cooking sells for around $6. So why would anyone spend $3 on one ear of corn on the cob that was covered in a mayonnaise and butter blend then sprinkled with chili powder and Parmesan cheese?

 

A lot of people wondered exactly that--but the answer is, it's good.

Who would put mayonnaise on a roasted ear of corn? It certainly doesn't sound like Iowa. For University of Iowa senior Mokotsi Rukundo, it is not only good but it is starting to sound like money in the bank. The idea first came to Rukundo while dining in a Cuban restaurant in Brooklyn, NY when he had his first Mexican style corn on the cob.

Rukundo, a senior in business studies, has never worked in a restaurant. After trying Mexican style corn on the cob, however, he launched his "CorNroc" at an Iowa Hawkeye's home football game. He set up a rented grill and tent at Iowa City's Magic Bus tailgating party near Kinnick Stadium.

That first day Hawkeye fans had more than 500 ears of his corn. Rukundo's test market at the game even included a corn-eating contest atop the Magic Bus. After some resistance to his mayonnaise slathered ear of corn local tastes came around. Now CorNroc is one of 20 student projects operating out of the university's John Pappajohn Entrepreneurial Center.

"He's definitely at the top tier, since he's generating revenue for his business," said Lynn Allendorf, the center's managing director. "He has vision and passion," she added. "Learning to manage day-to-day operations has been something he's had to work on."


The summer of 2009 was a struggle. He got through the slow summer months without students by concentrating his sales at local fairs and festivals.

His next business venture? Selling a hot sauce called "Moto"(Swahili for fire). If he can make corn seem exotic in Iowa, selling hot sauce from Africa should not be a problem.
